My Go To Breakfast Meals: Breakfast Salad and Avocado Toast

Top of the morning! Let's talk food, specifically the most important meal of the day - breakfast.


Does anybody have those specific meals they know how to make and it's one of the few meals they're confident in? I know for me I can make homemade lasagna, spicy vodka pasta, chili, jerk chicken wings, and a good cajun shrimp pasta. However, when it comes to breakfast I can usually slack and just do the usual grits, bacon, eggs, and toast. That can get old quick and honestly it's not that healthy even though I love me some cheese grits. To combat the days where I really want cheese grits but I know I should eat something better I decide to make either a breakfast salad or avocado toast.


The breakfast salad is made with:

  • Mixed greens

  • Sliced avocados

  • Bacon (preferably turkey bacon)

  • Grape tomatoes

  • Fried egg

  • Cucumbers

  • Croutons (if that's what you prefer)





The Avocado toast is made with:

  • Bread (best with whole grain or brioche)

  • Grape tomatoes

  • Feta cheese or bleu cheese

  • Scallions

  • Pink salt








I started to notice a difference in my day if I started out with a bit of breakfast. Even on the days I don't feel like making anything just eating a banana or some sort of fruit can really make a difference. I've recently been into making smoothies as well which is something I was really into during Covid shutdown. I've attached the link to a list of great smoothie recipes here. The main takeaway here is start your day off right with a nice bite to eat and see how it changes your day!
